Step 1 Firstly, in a large kadai heat oil and splutter mustard, urad dal, chana dal, peanuts, dried red chilli and pinch hing. Also add few curry leaves and chilli saute slightly.
Step 2 Now add tamarind extract, turmeric, salt and jaggery.
Step 3 Mix well, cover and boil for 10 minutes stirring in between.
Step 4 Cook until the oil separates from tamarind extract.
Step 5 Further in a pan dry roast mustard, urad dal, cumin, chana dal, coriander seeds, methi, sesame and dried red chilli.
Step 6 Roast until the spices turn aromatic. Cool completely and blend to a fine powder.
Step 7 Transfer the pulihora masala powder to the cooked tamarind extract and mix well. Mix until the paste turns aromatic.
Step 8 Now add cooked Zeeba basmati rice and salt.
Step 9 Mix gently making sure the pulihora paste is well combined with the rice.
Step 10 Finally, enjoy andhra style pulihora with curd or papad.
