KASHMIRI PULAO

Ingredients

  • 2 Tbsp Ghee, 1⁄2 Tsp Cumin
  • 2 Bay Leafs, 2 Green Cardamoms
  • 2 Black Cardamoms, 6-7 Black PepperCorns, 1 Tsp Fennel
  • 2-3 Cloves
  • 1 Cup Zeeba basmati rice
  • 2 Cups Water, 2 Tbsp Saffron Milk
  • 10-12 Cashews
  • 2 Tbsp Almonds, 2 Tbsp Raisins
  • 1⁄4 Cup Paneer cubes
  • 1⁄4 Cup apple diced
  • 1⁄4 cup Pineapple diced
  • 1⁄4 cup Grape Cut into half
  • 1⁄4 cup Pomegranate
  • 1⁄4 cup Fried Onion
  • Salt to taste

Preparation

Step 1 Heat 1 tbsp Ghee and add cashew, almonds and raisins, fry them and remove keep aside.

Step 2 Now add paneer and fry them too.

Step 3 Heat 1 tbsp Ghee in a pan, add whole spices.

Step 4 Now add Zeeba basmati rice and saute it for a minute.

Step 5 Add water, saffron milk and a pinch of salt.

Step 6 Mix it well, cover and cook until done.

Step 7 Add the fried nuts,paneer, onion, and fruits and mix it well.

Step 8 Serve hot Garnish with fried onion.
