SWEET YELLOW RICE

Ingredients

  • 1⁄4 cup ghee / clarified butter
  • 8 cashew / kaju (halves)
  • 5 almond / badam (chopped)
  • 2 tsp raisins / kishmish
  • 2 tsp dry coconut / kopra
  • 2 pods cardamom / elaichi
  • 4 cloves / lavang
  • 1 cup water
  • 1⁄4 tsp saffron / kesar
  • Pinch of Turmeric powder
  • 1⁄2 cup Zeeba basmati rice (soaked 30 minutes)
  • 1⁄2 cup sugar

Preparation

Step 1 Firstly, in a large kadai heat ghee and roast cashew, almond, raisins and dry coconut.

Step 2 Roast to golden brown on low flame and keep aside.

Step 3 In the remaining ghee add cardamom and cloves.

Step 4 Also add water, saffron and turmeric powder.

Step 5 Mix well making sure the ingredients are mixed well.

Step 6 Further, add soaked Zeeba basmati rice (30 minutes) and mix well.

Step 7 Cover and cook on medium flame for 10 minutes.

Step 8 Mix gently, making sure rice is half cooked.

Step 9 Further add sugar, ghee and roasted dry fruits.

Step 10 Mix gently making sure sugar melts.

Step 11 Cover and simmer for 5 minutes.

Step 12 Stir in between to prevent from burning.

Step 13 Finally, serve Sweet Yellow Rice hot garnished with few chopped nuts.
